I don't think there is anyway to stop their progress... it's all up to the weather. This happens to me on photo shoots all the time, If you want to add some color maybe your could add some roses in pots that you buy in full bloom right before? Not sure if that works in your design scheme.
But in any event I'm sure it will be lovely and Congratulations!!

this is great Stephen! we are getting married in our backyard in four weeks and have been struggling with our gravel. also - i'm wondering if you know how to solve this problem. My roses are blooming so beautifully now but i need them to bloom in four weeks for my wedding. do you have any ideas? would so appreciate.
